For almost 11 months now I have been mastering meals on the grill. I thought maybe you'd like to know my tips and tricks for preparing for the entire family on the grill with an occasion microwave moment. This meal was the first one I finally documented but I would love to share more in the future. There are so many good ones out there but it can be a challenge to put them together for a week as well. I'm bringing everything I have learned from a beginners perspective all to one place. Calzone's sounded like an excellent meal prep idea and so, I pulled out my mixing bowls, some precooked ground beef, all the ingredients for the dough and extras for the filling and got busy.
I'm not reinventing the "fat head bread" wheel here. I'm just tickled to death that I have found another solution for meal prepping. I did use a technique or two you'll appreciate when making these little crusts but seriously I'm more excited that I can make these little guys up and pack them away for my husbands lunch everyday. He works out in the field all day for his job and may not even have access to a microwave. He has a simple trick to warming his food if needed but even cold pizza is good pizza. Being fairly knew to the keto | low carb way of eating I have found myself on a mission to recreate dishes that are like the ones I used to enjoy but within my carb limits. This was one of those dishes I enjoyed on special occasions, like Thanksgiving or Easter dinners. However, as part of the challenge of this way of eating, I have been looking for ways of cooking to replace the old favorites with new flavors. This dish did not disappoint.
Sometimes you just need something that is going to be yummy and satisfy your potato craving while getting in a hefty amount of fat in your diet with very few carbs. I was a huge skeptic in using turnips or radishes as a potato alternative. I'm so glad I didn't back down and you will be completely satisfied as well. I always feel the need to cook my husband a hardy breakfast on the mornings he gets to be home with us. For this meal I pulled out my largest, deepest cast iron skillet and made one of our favorite meals. I love to top this one with softened cream cheese just before I eat my own slice. It's delicious and filling.
This is an excellent way to use up extra chicken. We always have a rotisserie chicken during the week for a quick meal, or I buy the pulled rotisserie meat from Costco. Either way, we always have left over chicken and it ends up being perfect for soups during the week. I'm always experimenting with soups and I love the creamy ones best. My kids love soup too so they are always a hit. I hope you enjoy this one as much as we did.
I am on a mission to create some insanely good breakfast food for my family and this one right here made the list of INSANELY DELICIOUS. I was a tad excited yesterday when it came out of the oven and hit their plates. Even the babies enjoyed their portion. This can also be prepared the night before and baked in the morning if you want to save time before school or church. I hope you enjoy making it as much as I enjoyed. It had been a long while since I have cooked roast beef. I found a great deal on a piece of meat that was ample size for our large family. I really should cook this more often, as my kids absolutely loved it and we had left overs for next days sandwiches. It is full of favorite and super easy to make. It put it in the crock pot after the kids went off to school and by dinner we had a feast with a side of buttery green beans and the kids enjoyed some small seasoned potatoes. I truly hope you enjoy this simple and easy recipe with your family as well.
Sometimes it's simply nice to have a treat. Occasionally, I'll see a recipe pop up on my social media and wish so badly it was keto friendly or at least low carb. I do my best to take the ones that look the most delicious and try to make it exactly what I need it to be. Playing around with different ingredients can be fun but when it turns out fabulous, that's when I really get excited.

I recently purchased some organic coconut milk and have been contemplating how to to use it. I had an idea for a creamy sauce and decided it would be perfect for some chicken leg quarters I had roasted in the crock pot. So, for Sunday dinner I whipped up this amazingly creamy, smokey, sauce. The flavor was smooth and mild. I think the would even make an amazing base for a soup in the future. I hope you enjoy it.
I posted this years ago and wanted to share it again. As a busy family of 7 with a grocery shopping budget, it pays to have family dinners planned and ready for preparation. These dollar store bins and a few clips are just wanted I needed to organize. Each week I would write out a simple meal plan, I would go through the pantry and add items I already had to the bins, canned food, seasonings, veggies that are okay stored in a pantry, etc. I would check my list for items I would need to purchase.
If I make rice for the kids or riced cauliflower for my husband and I, they beg me to make this sauce. It’s tangy, and sweet with a little kick. I mixes in about 5 mins and tastes better the next day. Hope you enjoy.
