I saw a video on IG reels of someone making these little snacks and I wanted to give them a try. There wasn't a recipe or anything attached so I just had to wing it with my toaster oven. Boy where they delicious. I will include some basic nutritional information below as well. I hope if you try these, you'll let me know what you think.
1 zucchini sliced thickly
1 cup of mozzerella
1 package of pepperoni
Sprinkles of Italian seasoning
Line your pan with foil or parchment paper and lay out your zucchini rounds as close together as possible until the pan is full. Spring with cheese, add meat toppings, we used pepperoni. Sprinkle with Italian season and more cheese. We toasted these in the toaster oven on medium (4 mins) and then broiled them for 5 mins to get them nice and toasty. We used a sugar free homemade spaghetti sauce for dip.
