Being fairly knew to the keto | low carb way of eating I have found myself on a mission to recreate dishes that are like the ones I used to enjoy but within my carb limits. This was one of those dishes I enjoyed on special occasions, like Thanksgiving or Easter dinners. However, as part of the challenge of this way of eating, I have been looking for ways of cooking to replace the old favorites with new flavors. This dish did not disappoint.

For me, my goal is to make delicious food that my family asks for over and over. My husband took one bite of these and insisted they go into his lunch box for lunch the next day. They were cheesy and full of flavor, easy to make and so yummy.
I recently purchased some organic coconut milk and have been contemplating how to to use it. I had an idea for a creamy sauce and decided it would be perfect for some chicken leg quarters I had roasted in the crock pot. So, for Sunday dinner I whipped up this amazingly creamy, smokey, sauce. The flavor was smooth and mild. I think the would even make an amazing base for a soup in the future. I hope you enjoy it.
Sometime, I just need a quick keto meal. I make this a couple of times a week for lunch. My husband loves it too as it keeps well in his lunchbox on job sites. It’s quick and easy and oh so satisfying.

I needed to use up some avocados that were get a little too ripe for my taste. I also wanted something tasty to add to my arsenal of keto approved condiments and this recipe did not fail. So, this simple recipe did the trick.

This gratin will convert those wary-of-green-vegetable eaters to greens lovers. A simple white sauce lightly coats Swiss chard leaves, and a topping of cheese seals the deal. For a different presentation, bake in individual gratin dishes or ramekins (seen above) rather than one large dish. Make up to a day ahead and keep in the fridge until ready to serve. Cauliflower has got to be the most versital of veggies I have ever seen. I serve up my fair share of zoodles but this veggie makes for excellent keto recipes. This one is simple. Ingredient List 1 head of Cauliflower 1 one onion sliced 10 cloves of fresh garlic 1 cup of baby carrots 1/4 cup olive oil 1 tbsp of butter parsley and basil salt and pepper |
