Being fairly knew to the keto | low carb way of eating I have found myself on a mission to recreate dishes that are like the ones I used to enjoy but within my carb limits. This was one of those dishes I enjoyed on special occasions, like Thanksgiving or Easter dinners. However, as part of the challenge of this way of eating, I have been looking for ways of cooking to replace the old favorites with new flavors. This dish did not disappoint. INGREDIENTS 4 turnips washed and thinly sliced 2 cups of heavy whipping cream 8 oz of cheddar cheese shredded salt and pepper to taste about 1 tsp each INSTRUCTIONS Preheat oven to 400 degrees F. In a small baking dish, I used a 9 x9, cover the bottom with butter. Place all slices of turnips in a 2 qt pot and cover with water, bring to a boil. Boil on high for 10 mins. This will soften the turnips to a more potato like consistency that the oven can to do by baking. Add one layer of turnips to the bottom of the dish, drizzle a mixture of heavy whipping cream, salt, and pepper over the first layer. Then sprinkle with cheddar cheese. Repeat these steps until all layers are complete. Top the remaining cheese. Cover with foil. Bake for 25 minutes, remove foil and bake for 5 more minutes to brown the cheese a bit MACROS - serves 9 Calories: 299 Fat 28g Net Carbs 4g Protein 8g .
