For almost 11 months now I have been mastering meals on the grill. I thought maybe you'd like to know my tips and tricks for preparing for the entire family on the grill with an occasion microwave moment. This meal was the first one I finally documented but I would love to share more in the future. It's easy, the chicken is Keto friendly, the meal as a whole is super healthy and you're going to love it. Please excuse my amateur pictures... hope you enjoy.

I recently purchased some organic coconut milk and have been contemplating how to to use it. I had an idea for a creamy sauce and decided it would be perfect for some chicken leg quarters I had roasted in the crock pot. So, for Sunday dinner I whipped up this amazingly creamy, smokey, sauce. The flavor was smooth and mild. I think the would even make an amazing base for a soup in the future. I hope you enjoy it.
I love making brisket for the family. Not only is it delicious and hearty, but the leftovers are perfect in my husbands lunch box the next day. Here's a few tips for picking out a good piece of meat.The fattier the cut of meat, the juicier this will be. Make sure to choose an inexpensive cut of meat. I usually look for second cut. For brisket, do NOT chose a first cut or top of the rib as they are took lean.
I just wanted to share this easy meal idea. My family loves hamburgers and we could use low carb and kept bread but this is actually one of my favorite ways to serve a burger. I can layer toppings sky high with whatever my family wants.
Along this keto way of eating journey there are so many things I have missed it wondered if I'd ever get to have again. So, ocasssionally on a wish and a prayer I get out my mixing bowl and start trying to recreate a family favorite. One of my favorites that I even shied away from when eating lean and clean was sausage balls. Who knew you could enjoy this family favorite and still lose weight?
Taco Tuesday is no joke in my house. For years I have been perfecting my taco-making craft. When we started a ketogenic diet we just eliminated the carb loaded chips and tortillas. I have felt like I was missing something. Something crunchy and textured. So, after much research and Pinterest-ing I have decided to go with taco bowls. It's easy and if you're new to a keto or low carb way of eating you'll find this to be satisfying as well.
When starting a ketogenic diet or low carb way of eating it can be a challenge. You may find that you miss some of your old food favorites. Knowing that your favorites may be wreaking havoc on your body, you avoid them. This journey for me has been in the making for years and I have enjoyed finding alternatives to my favorite foods that are healthier and fit within my way of eating. Wither you are eating a ketogenic diet or simply cutting carbs, you will find this recipe to be simple, easy, and tastes amazing. Enjoy this little treat.
Serves 6
This gratin will convert those wary-of-green-vegetable eaters to greens lovers. A simple white sauce lightly coats Swiss chard leaves, and a topping of cheese seals the deal. For a different presentation, bake in individual gratin dishes or ramekins (seen above) rather than one large dish. Make up to a day ahead and keep in the fridge until ready to serve. Husband and I are on a low carb diet and at dinner we had a classic BBQ feast to choose from; baked beans, slaw, pork, buns, the works. How did I make this meal as "low carb" as possible? I remade our own slaw and substituted a bun for a low carb wrap.

Now pile pulled meat (in this case, pork) onto a low carb tortilla wrap. FYI: Whole Wheat does not equal low carb, check carbohydrate grams when buying. Add a scant amount of BBQ sauce if regular or if you find a low carb brand you like. Pile on slaw and wrap. YUM! |
