I recently purchased some organic coconut milk and have been contemplating how to to use it. I had an idea for a creamy sauce and decided it would be perfect for some chicken leg quarters I had roasted in the crock pot. So, for Sunday dinner I whipped up this amazingly creamy, smokey, sauce. The flavor was smooth and mild. I think the would even make an amazing base for a soup in the future. I hope you enjoy it. INGREDIENTS
1 c of unsweetened coconut milk 1/2 c of heavy whipping cream 4 oz of cream cheese 2 tbls of paprika 1/2 sweet onion minced or (2 tbs dry minced onion) 1 tbls olive oil 1/2 tbls baking powder 2 tsp Himalayan Salt 1 tsp black pepper. INSTRUCTIONS
In a sauce pan heat olive oil and cook onion down until clear and soft on medium high heat. Add coconut milk, heavy whipping cream, and cream cheese. Stir until cream cheese is melted, add baking soda, paprika, salt, and black pepper. Stir until thick. Spoon over chicken. Top with bacon bits and enjoy.
