I have been craving some chocolate chip cookies. Every year I bake batches and batches of cookies with the kids and put them in fancy little box. We take them to all our neighbors. It's a sweet tradition that we have loved doing for years. This year, I wanted to make sure I made some sugar free/low carb/keto friendly for myself and for loved ones. Here is the first of many treats I plan on making in the next few weeks. It's gooey and rich. Enjoy.

Sometimes it's simply nice to have a treat. Occasionally, I'll see a recipe pop up on my social media and wish so badly it was keto friendly or at least low carb. I do my best to take the ones that look the most delicious and try to make it exactly what I need it to be. Playing around with different ingredients can be fun but when it turns out fabulous, that's when I really get excited.
My Father-In-Law’s all time favorite cake is a cheesecake. Years ago I set out to make him the perfect one for his birthday. After many attempts I finally got it right. I have to admit, it’s probably my favorite cake too. Below is my recipe, adapted for a low carb | keto way of eating. I have to say, I can’t tell a difference.
My kids and I were craving something sweet on our first cook day in September. I found a similar recipe that definitely was not keto and adapted the recipe so that it would work for us and give us a little treat as we approach fall. Enjoy.
Lemon Surprise is my favorite flavor.
Well, because it doesn't look lemony and the hint of lemon is subtle it cuts the sweetness of the icing. Here's my recipe for lemon icing! --------- |
