Chocolate Chip Cookie Bars Reduced Sugar Keto Friendly Low Carb
I have been craving some chocolate chip cookies.  Every year I bake batches and batches of cookies with the kids and put them in fancy little box.  We take them to all our neighbors.  It's a sweet tradition that we have loved doing for years.  This year, I wanted to make sure I made some sugar free/low carb/keto friendly for myself and for loved ones.  Here is the first of many treats I plan on making in the next few weeks.  It's gooey and rich.  Enjoy.
I grew up my entire life with a baby brother who developed Type 1 Diabetes.  He was 13 months old, in 1981.  Times were different and it was hard to not only maintain blood sugars for him, but treats were nearly out of the picture.  We had Tab and a few diet drinks.  We had saccharin and other artificial sweeteners.  Thank goodness for the advancement of some of the sweetness out there.  In this one I used Monk Fruit and a stevia blend.  I hope you enjoy it.  Now, I'm heading over to take my brother and is little boy (who developed Type 1 Diabetes at age 3) some special treats.

INGREDIENTS
1/2 c butter (melted)
2 eggs
1/2 c almond flour
2 tsp baking soda
1/2 tsp almond extract (optional)
1 tsp vanilla extract
1/2 c Monk Fruit sweetener
1/2 c Truvia Brown Sugar Blend
8oz bag of Hershey's sugar free chocolate chips.

INSTRUCTIONS
  1. Preheat oven to 325 degree F. 
  2. Melt butter, then set aside.
  3. Beat two eggs in a mixing bowl until foamy.
  4. Mix in sugars, flour, extracts.  
  5. Stir melted butter in and then chocolate chips.
  6. Pour mixture into a greased baking pan.  Bake for about 1 hour.
Almond flour browns faster than most so it will come out looking very done.  Serve warm with some Halo Top ice cream of choice.  It's a nice treat when you're wanting something sweet.
