For almost 11 months now I have been mastering meals on the grill. I thought maybe you'd like to know my tips and tricks for preparing for the entire family on the grill with an occasion microwave moment. This meal was the first one I finally documented but I would love to share more in the future. It's easy, the chicken is Keto friendly, the meal as a whole is super healthy and you're going to love it. Please excuse my amateur pictures... hope you enjoy. ~You're going to need your iron skillets.~ Ingredient List: Boneless Skinless Chicken Brest - butterflied G Hughes Sugar free BBQ Sauce Slices of Monterey Jack Cheese Bacon Bits Jasmine Rice or (Riced Cauliflower for Keto friendly version) Broccoli Steamed Seasoning to taste Coconut Aminos Onion 2 Cups of sliced mushrooms Coat the butterflied chicken in BBQ sauce in a bowl and set aside in fridge for 30 mins 2 Cups of Jasmine Rice to a bowl and cover with water to soak for 30 mins I used a side burner on my grill but you can use one side of your grill on high as long as you have a flame. Add your rice to a deep cast iron skillet, add 2 additional cups of water, salt, and pepper, and any season you enjoy. Cover tightly with foil and place on burner/over flame. On a hot preheated grill, turn the heat down to low and put your chicken on half the grill. The other half maybe used for the rice it will also be used for a side of onions and mushrooms. In another cast iron skilled (I use a small one) I add oil, sliced mushrooms and sliced onions and cover tightly with foil. On the opposite side of the chicken on the grill I place the skillet directly over the flame and turn it on medium heat. Inside the camper I steam microwave my broccoli and season to taste. When it's time to flip the chicken over, I check to make sure my rice doesn't need more water. I added 8oz more just to be safe and recovered it.
I flipped the chicken and stirred the mushrooms/onions and left them uncovered. I turned down the heat on my rice one the added water was boiling again. When the chicken was finished I cut off the grill completely sprinkled a few bacon pieces and added cheese slices to the chicken and closed the grill for 5 mins. The veggies and chicken were ready to remove and I the rice just needed fluffing. If you give these ideas a try, let me know how you liked them. Remember ultimately you are the chef at your grill, you are your own grill master and all grills cook differently. I do recommend cast iron cooking when cooking on a grill because they heat evenly and rarely over cook my food.
