For me, my goal is to make delicious food that my family asks for over and over. My husband took one bite of these and insisted they go into his lunch box for lunch the next day. They were cheesy and full of flavor, easy to make and so yummy. INGREDIENTS 4 cups of shredded zucchini, with moisture squeezed out through a colander. 3 eggs 2 tbls rounded, minced garlic 1 tbls oregano 1 tbls basil 1 tbls parsley 1 tsp Himalayn Salt 1 tsp black pepper 4 cups of shredded mozzarella, reserve 1 cup for toppings 1 tbls red pepper flakes INSTRUCTIONS Mix all ingredients well together in a large bowl. Line a bar pan or cookie sheet with parchment paper. Spread mixture evenly on pan. Bake at 425 degrees F for approx 30 minutes, remove and top with remaining mozzarella and sprinkle with red pepper flakes (optional). Pop back in the oven for 5 more minutes. I actually flipped mine over later and heated them a little longer to make sure they were good and firm. Remove from pan and let cool. Cut long ways down the middle with a pizza cutter then 11 short, 1-2" cuts to make a total of 24 sticks. Oh my gah, ya'll! These are ADDICTIVE! Hope you enjoy!
