Peppermint Cinnamon Rolls keto | low carb

Peppermint Cinnamon Rolls for a dreamy holiday breakfast.
I have been dreaming of this recipe for a long time.  You are going to love the peppermint flavor combined with the cinnamon sweetness.  These little beauties only lasted a few minutes after their photography session.  I hope you enjoy them.  They sure were fun to make (and eat).

This is the skillet I like to use to cook cinnamon rolls.  When preheated the dough climbs the sides while it rises.

INGREDIENTS
Dough
2 c almond flour
3 tbsp granulated erythritol (Swerve)
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp xanthan gum
2 large eggs, lightly beaten
1/4 cup butter, melted
1 tsp white vinegar (for rising action, you won't taste it)

Filling
1 tbsp butter, melted
​2 tbsp brown sugar substitute (Ideal or Truvia)
1 tsp cinnamon


Glaze
1/4 c of powdered erythritol (Swerve)
1 tbsp heavy whipping cream
1/2 tsp vanilla extract
1/4 tsp peppermint extract

Topping
Crushed Sugar-Free Pepper Mint Candies

INSTRUCTIONS
  1. In a large bowl, whisk together almond flour, erythritol, baking powder, baking soda, salt and xanthan gum.
  2. Stir eggs and butter into dough until it comes together. 
  3. Turn out dough onto a large piece of parchment and pat into a rough rectangle while sprinkling a bit of almond flour on top.
  4. Top with another piece of parchment and rob out to about 10x8 inches.  Peel off top piece of parchment paper.
  5. Brush dough with melted butter, then sprinkle with brown sugar substitute and cinnamon, all the way to the edges.
  6. Start with the far, longer edge of your dough, gently roll up tightly towards you.  Pinch the ends seam to seal.
  7. Chill for 30 minutes and preheat over to 350F
  8. Remove roll from fridge and using a sharp knife, carefully cut into 8 equal portions.  Place in the prepared cake pan or hot iron skillet.  Bake for 15 - 20 minutes or until just golden brown.  Remove and let cool.
  9. Mix your glaze while it cools.  Beat all the ingredients together in a  medium bowl and then pour over the rolls while still warm.
  10. Crush a few peppermint candies in a plastic bag and sprinkle on top.
