Sometimes you just need something that is going to be yummy and satisfy your potato craving while getting in a hefty amount of fat in your diet with very few carbs. I was a huge skeptic in using turnips or radishes as a potato alternative. I'm so glad I didn't back down and you will be completely satisfied as well. I hope you enjoy this recipe as much as I did putting it together for you.
This is a mock up, potato Free version of the warm and hearty soup from the Carnation Cafe at Disneyland Resort it is just the thing when the days turn gray and chilly. It’s pure comfort food.
INGREDIENTS
1 Pound bacon, roughly chopped 1 medium yellow onion, diced 1 large carrot, peeled and diced 3/4 cup diced celery 4 large turnips scrubbed clean and diced 10 red radishes, diced 1/4 cup almond flower 1/2 tsp xanthan gum 2 cups of chicken stock 4 cups heavy whipping cream course salt, ground pepper to taste Optional toppings: chopped chives, bacon bits, sour cream, shredded chided and colby jack cheese. INSTRUCTIONS
MACROS (serves 12) 1/2 cup servings Calories 436 Fat 40g Net Carbs 8g Protein 11g If you'd like to decrease the fat macro, use half the heavy whipping cream and 2 extra cups of broth. Personally, I'm more satisfied when the fat content is high even if I go over my macro allowance during the day, but seriously. One serving of this soup is so satisfying I'm good. It's a great pre or post fast meal.

I made this a couple of days ago. My husband smiled the whole time he was eating this. It was so good! Who needs potatoes when you have turnips and radishes? Who know?
