I am on a mission to create some insanely good breakfast food for my family and this one right here made the list of INSANELY DELICIOUS. I was a tad excited yesterday when it came out of the oven and hit their plates. Even the babies enjoyed their portion. This can also be prepared the night before and baked in the morning if you want to save time before school or church. I hope you enjoy making it as much as I enjoyed. It is such a privilege and honor to be able to serve my family in such a simple way. Enjoy! INGREDIENTS Cinnamon Roll Balls 2 c coconut flour 2 tsp of xanthan gum 1/2 cup butter softened 1/2 tsp salt 1/4 c heavy whipping cream 1/4 c Truvia Brown Sugar 1 tbs cinnamon Filling 5 eggs 1/4 c heaving whipping cream 1 tsp cinnamon 1/2 tsp nutmeg 1-1/2 tsp vanilla 1/2 tsp almond extract (optional) Cream Cheese Icing 1/2 c Swerve Powdered Sugar 1/4 c Cream Cheese softened 1/2 tsp vanilla 1 tbs heavy whipping cream 1 tbs water as needed (Optional: nut topping, I used slivered almonds) INSTRUCTIONS: In a large mixing bowl hand mix flour, salt and xanthan gum. Add butter and break apart with a fork until the butter pieces are tiny. Add HWC, vanilla, and stir until you form a dough ball. In a separate smaller bowl add cinnamon and Truvia and mix together. Form dough balls. press dough balls into the truvia and cinnamon, roll around and place into a 2 qt oblong baking dish, 9 x 13 approx. Whip all ingredients for filling together until blended well. Pour over dough balls. (Optional: cover and refrigerate over night, 6-8 hours.) Heat oven to 370 degrees F and bake for 35-40 mins until brown on top. Meanwhile mix icing. Icing should be pourable and a little runny, add hot water until it's the consistency you need and heat for a touch in the microwave if needed before pouring. Remove casserole from oven and pour icing over the top, add nut topping if desired. Serve warm. Serves 8-10. MACROS per serving. Approx 10 servings. Calories 273 Fat 22g Net Carb 7g Protein 10g

I just made this but 1/4 cup whipping cream did almost nothing to making my dough. I ended using 1 cup. Did I do something wrong?

It was delicious. My dough came together as I made the balls, but it still had a crumbly appearance before I started to form it.

2 cups of coconut flour seems like a lot, especially with the relatively small amount of liquid in the recipe. That's not a typo, right?

I had saved this recipe from some time ago and decided to give it a go today. By the time I realized it would not work I was already too invested (these ingredients are not cheap!), and went with it.
