This is an excellent way to use up extra chicken. We always have a rotisserie chicken during the week for a quick meal, or I buy the pulled rotisserie meat from Costco. Either way, we always have left over chicken and it ends up being perfect for soups during the week. I'm always experimenting with soups and I love the creamy ones best. My kids love soup too so they are always a hit. I hope you enjoy this one as much as we did. INGREDIENTS 1 lb of pulled chicken 32 oz chicken broth 10z can of roasted/diced tomatoes 5 cloves of garlic minced 1 small onion diced 1 tbs cumin 2 tbs chili powder 1 tsp salt 2 tsp pepper 8 oz cream cheese 1/4 heavy whipping cream 2 tbsp xanthan gum (save until last) INSTRUCTIONS Add all ingredients except xanthan gum to your slow cooker. Cook on high if you have 8 hours to spare, low if you need it in 4-6 hours. Before serving, using a hand mixer, blend the xanthan gum in well to thicken soup and cream together all ingredients. Serve hot and top with your choice of toppings, shredded cheese, sour cream, hot sauce, hot pepper flakes, etc. MACROS per serving (makes approx 12, 1 cup servings.) In not understanding your cook times? Do u mean IF i have 8 hrs to cook on low and 4-6 in high?
