Sometime, I just need a quick keto meal. I make this a couple of times a week for lunch. My husband loves it too as it keeps well in his lunchbox on job sites. It’s quick and easy and oh so satisfying.

I love making brisket for the family. Not only is it delicious and hearty, but the leftovers are perfect in my husbands lunch box the next day. Here's a few tips for picking out a good piece of meat.The fattier the cut of meat, the juicier this will be. Make sure to choose an inexpensive cut of meat. I usually look for second cut. For brisket, do NOT chose a first cut or top of the rib as they are took lean.

I don't know about my other Keto friends but I have been MISSING APPLES. So, I needed to come up with a recipe that would give me a taste without all the carbs. I was also wanting to taste something sweet. I haven't really had cravings for sweet but a treat every now and then is nice to have but if the recipe is tasty there goes the need to feel as though you should "cheat". That's my philosophy anyway. I'm not "deprived". I am satisfied.

Taco Tuesday is no joke in my house. For years I have been perfecting my taco-making craft. When we started a ketogenic diet we just eliminated the carb loaded chips and tortillas. I have felt like I was missing something. Something crunchy and textured. So, after much research and Pinterest-ing I have decided to go with taco bowls. It's easy and if you're new to a keto or low carb way of eating you'll find this to be satisfying as well.
I had left over cubed chicken after making my Chick-Fil-A Style Nuggets and I've been dying to try another recipe, keto style.
I typically make my famous grilled nuggets because they are healthier but since starting keto I have made some adjustments to ingredients and now we enjoy some of our favorite foods again. Here is my families new favorite dinner and it's just as food baked or fried.

This gratin will convert those wary-of-green-vegetable eaters to greens lovers. A simple white sauce lightly coats Swiss chard leaves, and a topping of cheese seals the deal. For a different presentation, bake in individual gratin dishes or ramekins (seen above) rather than one large dish. Make up to a day ahead and keep in the fridge until ready to serve. I had a meaningful conversation Saturday with my neighbor about out health and family members health. I told her we've been doing this thing called keto and she said her doctor recommended a ketogenic diet for her as well. Low carb and a keto diet are similar but I believe the keto diet has helped us get fast results and feel better then any "diet" before. It's all about increase healthy fats to flush out bad fat and decreasing carbs to make your body use fat as your fuel tank. The protein intake doesn't even change that much from a standard diet. Just remember...increase healthy fats and decrease carbohydrates. Being that we were just talking about this way of eating and I had a yummy soup in the crock pot I told her I'd send some over so she could taste why this doesn't feel like a diet at all. The food is rich and hearty. A little goes a long way.
Here is my recipe. Cauliflower has got to be the most versital of veggies I have ever seen. I serve up my fair share of zoodles but this veggie makes for excellent keto recipes. This one is simple. Ingredient List 1 head of Cauliflower 1 one onion sliced 10 cloves of fresh garlic 1 cup of baby carrots 1/4 cup olive oil 1 tbsp of butter parsley and basil salt and pepper
My kids and I were craving something sweet on our first cook day in September. I found a similar recipe that definitely was not keto and adapted the recipe so that it would work for us and give us a little treat as we approach fall. Enjoy.
