I typically make my famous grilled nuggets because they are healthier but since starting keto I have made some adjustments to ingredients and now we enjoy some of our favorite foods again. Here is my families new favorite dinner and it's just as food baked or fried. Ingredients 1 lb boneless, skinless chicken breast cubed 2 c. Almond Flour 4 eggs beaten 1 tbls garlic powder 1 tsp onion powder 1 tbls fresh dill minced 1 tsp paprika Peanut Oil for frying Heat oil to 375 degrees or is a deep frier that regulates the temperature for you. It's best to cook in small batches as almond flour likes to bubble over if you're not careful. In a bowl toss cubed chicken with beaten eggs and coat well. Mix dry ingredients in a separate bowl. Transfer coated chicken into dry ingredients only a handful of at a time. Toss chicken in dry ingredients. Carefully transfer to hot oil. Cook until coating is dark and crispy. Remove from oil and drain on paper towels. You can also bake the nuggets on 350 degree F for 30 mins. To make a mock CFA sauce. Mix 1 cup of mayo, 1 tbls of mustard, and a 1/2 tsp of a sugar free BBQ sauce. Enjoy. MACROS for 8 nuggets
