Im always thinking about meals for my family that are quick and easy to prepare. My 5 children are not picky eaters but Momma better bring savory food to the table. This was one of those meals, that again, they all loved. I have two that especially loves broccoli. INGREDIENTS 1 lb of sliced beef or pepper steak 4 cups of broccoli florets (fresh or frozen) 1 tbls of minced garlic 1/2 tbls of powdered ginger root 2 tbls butter 1/4 c coconut amino sauce (soy is not keto but this works as well) Optional 2 tbls is minced, dried onion or 1/4 cup freshly minced onion 2 tbls honey INSTRUCTIONS In a large iron skillet or wok add butter and coat pan. Add more if you feel it needs it. Cook over medium high heat. Add thinly sliced beef, garlic, ginger, and onion. Stir to insure meat is well cooked and cooked evenly. Reduce heat to medium and add broccoli (hint: you may need to add a bit of water to your skillet to create steam and keep the pan from getting to dry. It also brings the flavors from the bottom.) Cover until broccoli is bright green and beginning to soften. Drizzle coconut aminos (and honey if wanted) on and stir gently. If you don’t want to add calories and carbs with honey, a tbls of Truvia brown sugar alternative will do the trick as well. This is delicious served with diced cauliflower as a rice alternative.
