Calzone's sounded like an excellent meal prep idea and so, I pulled out my mixing bowls, some precooked ground beef, all the ingredients for the dough and extras for the filling and got busy. Forming Crust: I use parchment paper and a plate to make beautiful circles. You can make these whatever size you like. I go ahead and start dividing my dough once it's ready to insure I get 12 mini circles. Form each divided piece into a ball and place it on an 8" square piece of parchment. Using another 8" square piece, lay it on top of your dough ball and then evenly press the plate down until it is about 1/4" thick. Below is a screenshot of the macros from Carbmanager using all the ingredients. You can divide the amounts below by the serving size you make. So if you make 6 circles for calzones or 12 for mini pizzas you can figure your macros per serving. Crust Ingredients | 12 servings:
3 Cups of shredded Mozzarella Cheese 2 Cup of Almond Flour 4 tbsp cream cheese 2 egg Pinch of salt 1 tsp of each: oregano, garlic powder, onion powder, and rosemary (all optional) Your choice of toppings. Instructions:
Macros per mini calzone and do not include toppings Calories 208 Fat 17.4 g Carb 2.8 g Protein 11g *if you are simply eating low carb and not keto but you would like to decrease your fat intake, simple choose ingredients that are labeled as low fat such as your cheese and cream cheese.

Just made the calzones. They were pretty yummy; however, the carb count it way off. I plugged the ingredients into MyFitnessPal (for the dough only) and just racked up 36 grams of carbs- not 2.5g. Too bad - it really put me over my carb limit today. Still good recipe

My fitness pal doesn’t account for net carbs and you have to divide the total by 6 servings so 2.5g of carb per serving is accurate.

Thank you! I actually made the calzones yesterday and assembled the calzones today. I baked for 10 minutes to get that extra crispiness on the edges. It turned out great! I only put cheese, tomato sauce and pepperoni inside mine. I can’t wait to add more ingredients like spinach. I did have a few cracks in the dough, but I’m sure it’s because I rolled it too thin. The taste is delish! Thanks for sharing your recipe!

I personally don’t because I only prepare them fresh but s reader commented above that she made them, froze them, and pulled them out as needed to add filling.

I’ve never made it coconut. Coconut is very dry so it might need a touch of liquid if you decide to.

Yes u can use coconut flour to make this dough, this is the fathead dough recipe I've used for almost a year..and I have to use coconut as well :)

THANK YOU, THANK YOU, THANK YOU!!!!!! At last someone came up with an easy, clean way to make fathead dough. Mixing the almond flour and cheeses before melting makes an easy to mix, less sticky dough, Clean up is a breeze because there's almost no sticking to bowl or utensils. Can't believe this isn't all over the internet!

The way I read the recipe is that it is 12 rounds made, but for each calzone, you use 2 of the rounds, 1 to lay on bottom and add toppings, and 1 to cover. Using this method, I’d divide by 6.

I would say put it all in your tracker and divide it by what you eat as a serving size. If you make 6 large ones for 6 people divide by six, if you make 12 and feed 8 people divide by 12 so each person gets one for a serving, you can make your serving size whatever fits into your daily allotment.

Hey there, are the macros listed for 1/6 of the recipe or 1/12? In the recipe it says it makes 6 mini-calzones, but the macros seem more realistic for 12 mini calzones. It's difficult to tell what size they are, so we were confused? Does this recipe make 6, or 12?

It clearly says in the post that you can make them whatever size you want-she makes 12 mini servings. If you make bigger circles you will get less servings per recipe. The best way to calculate net carbs for any recipe is to measure your ingredients, add up carb count and subtract fiber etc to find your total net carbs per recipe. Divide by the number of calzones you’ve assembled & that will be your net carb per serving. If you’re eating keto/low carb and/or have ever followed a recipe this shouldn’t be difficult information to figure out.

Good explanation on how to calculate the carbs. I think when people are starting out with keto/low carb it is confusing because you have to subtract the fiber. 😊

These were time consuming to make and bake. The dough was difficult to work with at first until I got into the groove of it. I cooked mine on a warmed pizza stone and they stuck a bit. I also cooked a batch on a pan lined with tinfoil, they didn't stick at all. This recipe is absolutely delicious! I think the dough could be used for mini pizzas as well. I love love love this recipe.
