A quick and flavorful dish that's healthy and light. Our pantry and fridge are looking a little bare. I try to eat as clean as possible so it only takes a few days before I have to go grocery shopping again. Today I got a glimpse of another recipe here. I was inspired. What can I make with what I have.
Here's what I found. I had Quinoa, the multi-colored kind. Baby Sweet Bell Peppers Sweet Onions Grape Tomatoes Spinach Avocado Low-Fat Greek Yogurt Seasonings* Honey Chicken So, I threw the chicken into the skillet with some sliced onions and covered. I will turn and season with Pampered Chef's Sweet Basic Rub*. Put the Quinoa on 1 cup per 2 cups of water, sliced peppers, and sliced onions, sprinkle of red pepper flakes and boil until fluffy and then stir in tps of honey. In the food processor, add two avocados, 1/2 cup of yogurt, and guacamole seasoning.* Slice grape tomatoes in half, season* with salt & pepper. To plate: Spoon over quinoa, lay down a bed of fresh spinach, top with sliced chicken, onions, avocado sauce and tomatoes.
